Kaddu (
Pumpkin) Kheer is a sweet preparation. Kaddu is used as vegetable mainly. Children mainly run away listening if such kind of vegetable is cooked in home. But now this kheer can decrease your work load by impressing children with new dish. Children are fond of sweet dish. So they love this one too.
Ingredients for Pumpkin Kheer Recipe:
Yellow pumpkin - 01 kg,
Milk - 01 lit.,
Sugar - 150 grams,
Mawa or khoya - 150 grams,
Ghee - 01 Tbsp,
Cardamom (crushed) - 1/2 tsp,
Cardamom - 02 whole,
Saffron - 01 pinch.

How to Make Kaddu (Pumpkin) Kheer:
Peel of the pumpkin and grate it. Press the grated pumpkin with the help of hand, and squeeze the water out.
Now heat the ghee in a pan and add 2 whole cardamom, stir for 1/2 minuet and add grated pumpkin.
When the pumpkin looks little dry, add sugar also. Cook for 3-4 minutes by stirring continuously. So that sugar started melting. Add milk at the same time, stir frequently.
When the milk comes on boiling allow simmer, add khoya now. Cook it for 5-6 minutes, when the consistency look a like normal kheer.
Add cardamom powder and kesar also, turn off the gas. Serve it hot or cold as you wish.
