Ingredients for Petha Sweet:
Petha fruit (Gourds or white pumpkin) - 01 kg,
Sugar - 01 kg,
Kewda essence - 1/2 tsp,
Alum (Phitkiry) - 1/4 tsp,
Saffron or Sweet color - 3-4 drop.

How to Make Petha Sweet:
Take a big container, fill it with water and dissolve the powdered alum in the water, now pour all the petha cubes in the same water, cover it and keep aside for 2 hours.
After 2 hours take out all the pieces from water and wash it cleanly so that alum water should not be remain with petha cubes.
After this again in a big container boil enough quantity of water, when water reach on boiling put all the cubes in the water.
After 5-6 minutes the color of petha cubes gets change. Turn off the gas and drain all the water from container.
Now add sugar with cubes and keep the pot on very slow flame. After few time the moisture of petha cubes will helps in dissolving sugar.
When the sugar syrup reach on 1 string consistency add 2-3 drops of sweet color and cook it on medium low flame.
When the syrup is of 3 string consistency turn off the gas and leave the mixture for 5-6 hours, cover it also.
This time helps in absorbing sugar syrup. Add some kewda water, your petha sweet is ready now.
If sweet is looking so juicy take out in a shallow pot and leave it for 3-4 hours in the air so that you will get dry petha sweet. Keep in the fridge and enjoy for long time.
